From June 9 to August 10, 2025, Café Summit at Grand Summit Hotel – General Santos transforms into a flavorful stage for Reimagined Filipino Cuisine—a nationwide culinary campaign by Robinsons Hotels and Resorts (RHR) that blends heritage and innovation in every dish.

This two-month celebration showcases the talent and creativity of six RHR chefs from across the country, each presenting a personal interpretation of a classic Filipino favorite. These signature dishes are served on rotation—one featured each day from Monday to Saturday—and culminate in a grand Sunday buffet featuring all six culinary creations.

Representing General Santos is Chef Remie Malicy, whose Beef Bulalo Riyandang is a powerful fusion of two rich, comforting traditions: the familiar marrow-laced broth of bulalo and the deep, spiced complexity of Malaysian rendang. “Beef rendang was the first dish I ever learned to cook in Malaysia,” Chef Remie shares. “Blending it with bulalo reflects both my journey and the bold flavors of Mindanao.”

Guests can look forward to a new flavor every day of the week:
Monday: Crispy Lechon Kinunot by Chef Mau Dominguez (Cebu) – a fusion of crunchy Cebu lechon and creamy seafood kinunot
Tuesday: Maya-maya, Kahel, at Lukban by Chef Kiko Tugnao (Naga) – a vibrant mix of snapper, citrus, and sweet saba
Wednesday: Chicken Hinatukan by Chef Ricky Norcio (Tacloban) – a comforting stew with coconut milk, lemongrass, and green papaya
Thursday: Braised Shortribs Kinamatisan Ravioli by Chef Arvin Ace Barsaga (Greenhills) – a tomato-based classic reimagined in delicate ravioli
Friday: Beef Bulalo Riyandang by Chef Remie Malicy (General Santos) – a bold marriage of tradition and spice
Saturday: Crispy Handrolled Palabok by Chef Ernie Baculio (Tagaytay) – a reinvention of palabok wrapped in golden, crisp shells
Sunday: All dishes available.

“These dishes are more than just creative—they’re personal,” says Ms. Cecille Padilla, RHR’s Corporate Director for Food & Beverage. “Each one tells a story, rooted in the chef’s hometown and experiences. It’s a flavorful journey of identity and artistry.”

The weekly cycle builds up to Sundays, when all six dishes are featured in a lavish buffet—a treat for both seasoned foodies and curious first-timers.

“We believe food is more than sustenance—it’s memory, emotion, and connection,” explains Mr. Barun Jolly, RHR Senior Vice President and General Manager. “With Reimagined Filipino Cuisine, we bring to life our promise of Hospitality by Heart through dishes that nourish and inspire.”

Here in General Santos, the campaign takes on special meaning. “We’re proud to host this celebration at Café Summit Gensan,” says Mr. Jesse Chua, General Manager of Grand Summit Hotel – General Santos. “It’s an exciting tribute to the evolving Filipino palate—familiar yet fresh, humble yet bold.”

Whether you’re a passionate foodie, a lover of local flavors, or simply curious to try something new, Café Summit Gensan offers a rare opportunity to experience Filipino cuisine through a fresh, creative lens. With every dish rooted in tradition and elevated by personal stories, it’s a dining journey that speaks to both heart and heritage—one plate at a time.
